Happy Easter!

Happy Easter, Everyone!  I hope you all enjoyed a wonderful Easter with family and friends.  I missed not being able to spend the day with family at Aunt Nancy's, but I had a nice Easter dinner with friends.  And now that Lent is over, I am back to eating ice cream (and complaining!  However, maybe I should keep up with the no complaining.)  Easter dinner dessert would not be complete without ice cream so I made apple dumplings with caramel ice cream.  Yum!!  

It was just too good not to post pictures.  I almost had a little mishap while making the apple dumplings...apparently I wasn't paying attention yesterday while I was grocery shopping and thought I was buying normal crescent rolls.  As I was opening the package today, I noticed I had bought garlic butter crescent rolls.  Oops!  I didn't think that would go too well with apples, cinnamon and sugar, so I had to make a quick trip back to the grocery store.  Luckily, it all turned out yummy in the end!  Homemade apple dumplings and caramel ice cream....I would definitely recommend this dessert!
